Grain Free Carrot & Raisin Muffins

Ingredients
  • 2 cups almond flour
  • ½ tsp sea salt
  • 1 tsp baking soda
  • ½ tsp allspice
  • ½ cup shredded coconut, unsweetened
  • 3 organic eggs
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • 1 tbs grated fresh ginger
  • 1 cup grated carrots
  • ½ cup raisins
Instructions
  1. Preathea the over to 350 degrees, line a muffin tin with parchment paper cups.
  2. In a large bowl, combine almond flour, salt, baking soda, spices, and coconut.
  3. In a smaller bowl whisk together eggs, oil, and syrup. Add fresh ginger, grated carrot, and raisins.
  4. Stir wet ingredients together with dry ingredients.
  5. Spoon batter into muffin tins.
  6. Bake at 350° for 20 minutes.
  7. Cool for 10 minutes, then server and enjoy.
