Smokey Lentil and Chickpea Soup

Serves: 4
- ½ white onion (chopped)
- 2 cloves of garlic
- 1 tbs olive oil
- 1½ tsp of paprika
- ½ tsp of thyme
- ½ tsp of salt
- pepper to taste
- ⅔ cup of dried red lentils
- 1 can of fire roasted tomatoes (with juice)
- 1 can of chickpeas
- 3 cups of vegetable broth
- Heat a large pot over medium heat, add the olive oil and the onions. Cook for a few minutes until they are translucent.
- Add the garlic. Cook for another 2 minutes. If it's sticking add a teaspoon or two of water.
- Add the spices and cook for another 2 minutes.
- Add the vegetable stock, lentils, chickpeas and tomatoes. Bring the pot to a boil and then cover and simmer for 20-30 minutes.
- Serve in bowls and enjoy.
