Happy Sunday! I have a confession to make….I have really fallen off the wagon with my diet these last few months! I have been eating cheese and bread and everything in between. I don’t feel my best when I eat like this so I am going to get back on track starting right now. If I put it in writing here it will help me stay on track. 😉 I get really bloated form eating dairy and bread so its a win win. I feel better and I look better. I am going to Mexico in August for a wedding and would love to wear my bikinis instead of my one piece….. So time to get working out and making better food choices daily!

This fruit smoothie bowl is a step in the right diction. You can use whatever fruit you like but it has to be frozen so that it ends up like ice cream consistency. I like to freeze my bananas when they are nice and spotty and soft. This raw date granola is the perfect topper, its sweet and healthy! I also like to add super foods to mine as well. This one has hemp seeds and chia seeds on it.

Smoothie Bowl with Raw Date Granola

Ingredients
  • 2 frozen bananas
  • 1 cup frozen fruit of your choice I used organic raspberries
  • 2 tbs water
  • Date granola:
  • 1 cup old fashioned oats
  • 9 pitted medjool dates
  • ½ cup unsweetened shredded coconut
Instructions
  1. In your blender or food processor blend up the date granola until its small and chunky consistency, then store in a jar in your fridge till you want to sue it, you will have leftovers.
  2. For the smoothie bowl, blend bananas and frozen fruit together in your blender with a bit of water until it looks like ice cream.
  3. Scoop fruit smoothie into a bowl and top with granola and any other goodies you want.
  4. Enjoy!

Perfect Popcorn Recipe

Happy Monday! 🙂 Who loves popcorn?! The last time I had movie theatre popcorn my stomach was not happy for the next few hours….. So I decided to make my own at home and it was so freakin yummy and way healthier I might add.  I think of popcorn as a treat so I’m ok with the butter that I used on it. 😉 If you haven’t tried nutritional yeast, now is the time.  It adds such a nice cheesy flavour to the popcorn.

I haven’t made microwave popcorn in years, since I know it is soooo bad for me. I used to use an old fashioned air popper but this stove top recipe tastes better and is way easier then digging in my cupboard for the air popper! I hope you enjoy this as much as I did!

Perfect Popcorn Recipe

Serves: 1-2
 
Ingredients
  • 3 tbsp coconut oil
  • ⅓ c organic popcorn kernels
  • 1-2 Tbsp of butter
  • Salt and pepper to taste
  • 2 tbsp nutritional yeast
Instructions
  1. In a heavy pot with a lid, heat the coconut oil over medium to high heat.
  2. Add 3 popcorn kernels and wait till they pop, once they pop add all of the kernels and put lid on top and remove from heat for 30 seconds.
  3. Put the pot back onto the heat with the lid on, once you hear the kernels popping, turn off the heat and keep covered till popping stops.
  4. In a small sauce pan over medium heat, melt the butter.
  5. Pour over popcorn and season with salt. pepper and yeast.
  6. Enjoy!

Cheesy Cashew Dip

Happy Sunday! I have been playing catch up all week with work so I haven’t been in the kitchen cooking up a storm. I did manage to whip up this cheesy vegan dip. Superbowl Sunday is right around the corner next weekend and it’s always nice to have some healthy snack recipes on hand. Last year I made these vegan loaded nachos and they were a BIG hit! This recipe is quick and easy and has a nice creamy cheesy taste without the guilt! I think it tastes good with veggies as well as corn chips! 😉 What is your favourite Super Bowl snack?!

Ingredients
  • 1 cup soaked cashews (min 2 hours)
  • ¼ cup nutritional yeast
  • 1 pinch sea salt
  • 3-4 tbs of water
  • 3 tbs fresh organic salsa
Instructions
  1. In a food processor combine all ingredients until smooth.
  2. If the dip is too thick add more water.
  3. Serve with a sprinkle if paprika.
  4. Enjoy!

Grain Free, Sugar Free Gingerbread Loaf

I made this tasty loaf over the holidays and it’s the perfect snack with tea! 🙂 You don’t have to feel guilty eating it now that you are getting your diet back on track because its super healthy, most gingerbread cookies are full of sugar and covered in sweet icing. This loaf is savoury and nutty, and I love it.

I am so excited to get back into the kitchen and cook up some delicious and warming winter dishes to inspire you all to eat healthy over the next few months. I’m definitely not craving cold salads right now and smoothie bowls make me so cold. So I’m trying to find some healthy warming food for the next few months. I’m loving home cooked oatmeal with toppings like, seeds, nuts and fruit. You guys know I love a me a good bowl soup. If you have any great winter food ideas, share with me in the comments below,

Gingerbread holiday loaf

Grain Free, Sugar Free Gingerbread Loaf

Serves: 10 pieces
 
Ingredients
  • ⅔ cup black strap molasses
  • 4 organic eggs
  • ¼ cup almond milk (or any other dairy free milk)
  • 1 tsp vanilla extract
  • ⅓ cup coconut oil, melted
  • ½ cup almond flour
  • ½ cup coconut flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp all spice
Instructions
  1. Preheat your oven to 400 degrees. Grease a loaf pan and lay parchment paper over the bottom coming over the sides to make removal easier.
  2. Mix together your dry ingredients in one bowl and your wet in another.
  3. Gently combine the two and pour into your loaf dish.
  4. Bake in the oven for 35 minutes.
  5. Let cool and then serve.

Grain Free Cinnamon Swirl Bread

OMG this bread turned out amazing! 🙂 I was on the internet the other day when I stumbled upon this awesome blog called My Big Fat Grain Free Life, Jen is on a similar diet to me. I found her tasty swirl bread recipe and knew I had to try making it. I believe in giving credit, where credit is due, Jen you rock! I slightly adapted her recipe. Even if you are not on a grain free diet, this bread will make your tummy smile. 🙂 Everyone in my house wanted a piece. Serve with a nice cup of tea on a rainy day like today and you are set! Grain free cinnamon swirl bread

Grain Free Cinnamon Swirl Bread

Serves: 1 loaf
 
Ingredients
  • 4 eggs
  • ½ cup almond butter
  • ½ cup apple sauce (unsweetened)
  • 1 tbsp apple cider vinegar
  • 3 tbsp honey
  • 1 tsp vanilla
  • 2 tbsp olive oil
  • 1 tbsp cinnamon
  • 1¾ cup almond flour
  • pinch sea salt
  • ¾ tsp baking soda
  • 1 tsp cinnamon
  • ¼ cup coconut sugar
Instructions
  1. Preheat your even to 350 degrees and then grease a bread pan with coconut oil, adding a piece of parchment paper to help you get your bread out later.
  2. In your blender combine all the ingredients except the last 2 (cinnamon and sugar).
  3. Once everything is combined pour batter into your bread pan.
  4. Mix your cinnamon and sugar together and then swirl it through your batter.
  5. Bake in the oven at 350 degrees for 45 minutes.
  6. Let cool, then slice and serve.
  7. Enjoy!

Grain Free Sugar Free Banana Bread

Happy Hump Day! 😉 Who else loves banana bread? I hate when you go to a coffee shop and you order a slice and it’s stale and dry. This recipe is moist and fluffy and super healthy. Most recipes have sugar in them. Bananas are actually very sweet so you don’t really need to add any sugar or sweetener. Again because of my new diet this bread is grain free. I used coconut flour but you could also use almond flour if you have it on hand. I put these to the test with my boyfriend and my little guy and they both loved it.

I have to admit that this last month on the new diet has been tough. It is getting easier everyday. Food prep is essential! When I make big batches of things I know I can eat and they are ready when I am starving, it really helps. I have eaten a few meals with grains in them over the last 2 weeks, and I always end up feeling bloated after…..So I think I will stay on this grain free diet a while longer. Eating out at restaurants is always a challenge, so I try to eat at home most of the time. I will keep you guys updated over this next month. I do think that my gut is starting to heal! 🙂

Grain Free Sugar Free Banana Bread

Ingredients
  • 4 rips bananas
  • 4 organic eggs
  • 3 tbs almond butter
  • 4 tbs melted coconut oil
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of sea salt
  • ½ cup coconut flour
Instructions
  1. Preheat your over to 350 degrees, grease your baking pan with coconut oil.
  2. In a food processor combine all of the wet ingredients. Blend for 1 minute.
  3. In a small bowl whisk together all of the dry ingredients.
  4. Then add the dry to the wet in your food processor and mix again or another minutes.
  5. Bake in the oven on the middle rack for 55 minutes.
  6. Let cool then serve and enjoy!

Grain Free Carrot & Raisin Muffins

I just love to make fresh warm muffins. It was one of my favourite things that my mom made for us growing up. I have really been missing bread on my new diet and so making bread type things to feed my cravings is really helping. These muffins are gluten and grain free, but they still taste delicious. 😉 They are perfect for me to grab and take to eat on the go when I’m working or on the road. Plus, I even snuck in some veggies in these. 🙂 These muffins would be perfect for your kids lunches too.

Ingredients
  • 2 cups almond flour
  • ½ tsp sea salt
  • 1 tsp baking soda
  • ½ tsp allspice
  • ½ cup shredded coconut, unsweetened
  • 3 organic eggs
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • 1 tbs grated fresh ginger
  • 1 cup grated carrots
  • ½ cup raisins
Instructions
  1. Preathea the over to 350 degrees, line a muffin tin with parchment paper cups.
  2. In a large bowl, combine almond flour, salt, baking soda, spices, and coconut.
  3. In a smaller bowl whisk together eggs, oil, and syrup. Add fresh ginger, grated carrot, and raisins.
  4. Stir wet ingredients together with dry ingredients.
  5. Spoon batter into muffin tins.
  6. Bake at 350° for 20 minutes.
  7. Cool for 10 minutes, then server and enjoy.

Gluten Free Pumpkin Bread

Mmmmm pumpkin. 😉 Hello September, hello fall foods! Some of my favourite comfort foods come from falls seasonal veggies and fruits; like pumpkin bread, baked spaghetti squash, cauliflower soup and fresh pear & apple crisp. I always love when the leaves start to turn and the air gets crisp, it means I can get in my kitchen and bake anything made out of pumpkin. I think pumpkin is a love it or hate it food… I LOVE it. 😉 This healthy grain free pumpkin bread is sure to be a hit. I served it to my guests last week and they gobbled it right up! If you haven’t heard of Danielle Walker yet, you should go and check out her blog Against All Grain. This recipe was inspired and adapted from her pumpkin bread. Ingredients
  • 3 organic eggs
  • ½ cup almond butter
  • ½ cup maple syrup
  • ¾ cup pumpkin puree (I used canned)
  • 3 tbsp butter
  • 2 tsp lemon juice
  • ⅓ cup coconut flour
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
Instructions
  1. Pre-heat your oven 350 degrees. Grease a baking loaf pan with coconut oil and then line the bottom with parchment paper.
  2. In a food processor combine all if the ingredients together. Mix well for 2 minutes.
  3. Pour the mixture into your pan and sprinkle with a few chocolate chips if you want.
  4. Bake in the oven for 45-50 minutes.
  5. When you poke it with a toothpick it should come out clean.
  6. Allow to cool completely before moving out of your baking pan.
  7. Eat or store in your refrigerator.

Gluten Free Raspberry Coconut Muffins

 I can’t believe its already March! This year is just flying by……….I am totally ready for spring so I am definitely not complaining. We are so lucky here in BC to have had such a mild winter, unlike the east coast of Canada! I feel bad for my friends living in Toronto.

I know I have posted a few muffin recipes on my blog but this one is probably my favourite. I saw a blubbery recipe on Instagram and felt inspired to make one with raspberries instead….and raspberries go great with coconut! Each time I make them I change a few ingredients and the taste is a bit different but they always taste good. These are super healthy as well so no need to feel guilty about eating 2 at once. 😉 I am sure you all know this fact but just in case you don’t, raspberries are one of the dirty dozen (sprayed fruits and vegetables). This means that you should always try and buy them organic, they are not in season now so buying them frozen is a good option. Just a little health tip. 😉

Ingredients
  • 1 cup almond flour
  • 1 cup brown rice flour
  • 2 cups frozen raspberries
  • 1 tsp vanilla extract
  • 2 organic eggs
  • ½ cup of honey
  • 1 tsp apple cider vinegar
  • ⅓ cup coconut oil
  • 1 tsp baking soda
  • ½ cup unsweetened shredded coconut
  • ¼ tsp salt
Instructions
  1. Preheat your oven to 350 degrees, grease your muffin tin with coconut oil.
  2. In a bowl mix all of the dry ingredients, in a smaller bowl mix all of the wet ingredients together.
  3. Combine the 2 together and fold in the frozen raspberries.
  4. Scoop batter into muffin tins and bake for 20-25 minutes.
  5. Cool the muffins on a rack, then serve and enjoy.

Crispy Spiced Chickpeas

Happy Hump Day! 😉 This week is flying by fast for me. I just love roasted chickpeas, they are savoury and crunchy and healthy! I highly recommend them as a healthy snack, they are kid approved as well. My son just can’t get enough of these treats. I must admit that one of my weaknesses is potato chips……..there I said it. I know they are not good for me and I try to avoid them most of the time but sometimes nothing else will do. Am I right?! These crispy chickpeas are a great alternative, keep them on the counter for a pre-dinner snack. You can season them with whatever spices you like, I like cajun the best, but you could make them a sweet by seasoning your chickpeas with cinnamon and honey. Happy snacking! 😉

Crispy Spiced Chickpeas

Ingredients
  • 1 can of chickpeas
  • 1 tbs cajun spice
  • 1 tsp paprika
  • ½ tsp onion powder
  • coconut oil spray
Instructions
  1. First rinse and dry your chickpeas. Preheat your oven to 400.
  2. Cover your baking sheet with parchment paper and lay the chickpeas out flat.
  3. Spray them with coconut oil and season them with spices.
  4. Bake in the oven for 25 minutes, tossing them over at the half way point.
  5. Let them cool for a few minutes.
  6. Serve and enjoy!
