Wow, I can’t believe its only 2 weeks left till Christmas! December always flies by so fast. I recently went to a naturopath and got some food testing done…. It seems I am intolerant to a lot of foods, one of them being dairy. I have loved eggnog since I was a kid and since I have found that the store bought dairy free ones just haven’t seemed to taste anything like real eggnog, I decided it was time to make my own.

Dairy Free Egg Nog

  • 1 cup cashews (soaked in water over night)
  • 1 tbs maple syrup
  • ½ cup toasted coconut
  • 1 can light coconut milk
  • ½ pitted dates (soak in water for 30 min prior)
  • 2 tsp vanilla
  • ¼ tsp salt
  • ¼ tsp ground cloves
  • 1 tsp nutmeg
  1. In a blender puree all the ingredients together util smooth, if the consistency is too thick, add some of the water you used to soak the dates.
  2. Serve over ice to chill and add Spiced Rum if desired!
  3. Enjoy
