I hope you all had a great weekend! I took my 5 year old son to the pumpkin patch and corn maze today. It’s one of my favourite fall traditions. 🙂 We had fun in the maze, picking out a pumpkins and learning about where the food on the farm comes from. 😉 I haven’t been making too many blog worthy meals in the last week so I thought I better get to it this weekend. I found this recipe on Pinterest and changed a few of the measurements. The original recipe is from running with spoons blog. These are super healthy and tasty, they have no sugar or gluten! Perfect for an afternoon snack or tea time. I only discorded my love for dates in the last 2 years when my fruitarian personal trainer got me hooked on them…. thanks Ted! 😉 They really are natures candy and they make any recipe sweet. I love making my raw granola with dates. I hope you like these squares as much as I did.

Healthy Date and Oat Squares

Ingredients
  • For the crust:
  • 1½ cup rolled oats
  • ½ cup almond flour
  • ½ cup raw almonds
  • ¼ tsp. salt
  • 3 Tbs brown rice syrup
  • 2 Tbs melted coconut oil
  • For the filling:
  • 1 cup dates,(pitted)
  • ¼ cup cocao powder
  • ⅓ cup water
Instructions
  1. Line an 8x8 baking pan with a sheet of aluminum foil, leaving a few inches of foil on the sides to make it easier to get the bars out.
  2. In a food processor, process oats, almond flour, almonds, and salt for one minute. Add the brown rice syrup and coconut oil, and continue processing until all the ingredients are mixed together.
  3. Reserving ½ cup of the oat mixture, transfer the remaining dough into your prepared baking pan, using your fingers or a spatula press the mixture down firmly and evenly.
  4. To make the filling, add the dates, cocoa powder, and water to the now empty food processor, and process until the dates become a paste. Add another tbs of brown rice syrup if you want them a little sweeter.
  5. Transfer the date mixture onto the oat layer in your pan and spread out evenly, Sprinkle the reserved oat mix on top and gently press it down with your fingers. Refrigerate for at least 1 hour before cutting into bars.
  6. Store bars in an airtight container in the fridge.
