Pea and mint penne

Yay, its “Hump” day! 😉 Which means its close to the weekend in my books. I am looking forward to heading to the Island to see my family and eat delicious food for Thanksgiving. I love to cook but I also love to be cooked for. 😉 I can’t wait to taste all the delicious food my Mom will be making this year. You really don’t appreciate your Mom till you are an adult and you have a child and you can’t get her cooking as often as you like. My Mom is the BEST. Just like I am sure your Mom is too. This pesto is bright and fresh and easy to make. Its great if you don’t have any fresh basil on hand instead you can just use frozen peas… sneaky. This pasta would be great with fresh parmesan cheese, I used Go Veggie vegan parm. I topped my pasta with some micro greens I had on hand, because everything is better sprouted! My pun for the day. 😉

Pea and Mint Pesto Pasta
Serves: 3-4
  • 1½ cups of peas
  • 2 cloves of fresh garlic
  • 2 tbs olive oil
  • 2 sprigs of fresh mint
  • salt and pepper to tast
  • ¼ pine nuts
  • 1 tbs lemon
  • 2-3 shot glasses of water
  • 3-4 cups cooked pasta
  1. Cook you pasta accruing to the package instructions. I used a gluten free penne.
  2. While the pasta is cooking make the pesto in a blender or food processor. Mix all of the above ingredients together in your blender, adding more water if the consistency is too thick.
  3. Once pasta is cooked, mix in the pesto.
  4. Serve with parmesan cheese if desired and enjoy!
