zuchini muffins

Who loves Mondays?! I definitely don’t, today was extra long because I was tired and sick at work. I just can’t seem to beat this nasty cough I have! 🙁 I don’t know how I found the energy to make these muffins after work….sometimes I think I have super powers. 😉 These muffins are delicious and pretty healthy too! 🙂 They are easy to make and a great way to sneak zucchini into your family! I grew up having muffins in my lunch and they always beat a sandwich in my books. I’m sure my son is getting tired of sandwiches at school so I thought these muffins would be a nice change. These muffins taste kinda naughty with the chocolate chips but are in fact pretty healthy being made with whole wheat flour, coconut oil and zucchini!

Chocolate Chip Zucchini Muffins
Recipe type: muffins
Cuisine: vegetarian
Serves: 10-12
  • 1½ cups whole wheat flour
  • ¾ brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp vanilla
  • ½ cup of coconut oil
  • ¼ cup of almond milk
  • 1 cup grated zucchini
  • ¾ cups of dark chocolate chips
  • 1 tsp lemon juice
  1. Pre-heat oven to 350 degrees. Grease a 12 serving muffin tin with coconut oil.
  2. Mix all of the fry ingredients in on bowl. Mix the egg, oil, vanilla, milk and lemon juice in another bowl then gently fold the 2 together, and add the zucchini and chocolate chips.
  3. Spoon the mix every into the muffin tins, they should be ¾ of the way full.
  4. Bake in the oven for 25 minutes.
  5. Let them cool on a rack for 5 minutes, then serve and enjoy!
