I hope everyone is having a great week so far, happy “hump”day! 😉 I have newly discovered my love for Vietnamese food. I have recently been spending my lunch breaks eating at a great little place on Hastings called Broken Rice. They have a tofu noodle bowl and a great vegetable pho. They are both delicious and healthy and they satisfy your hunger without making you feel over full like you do when you have too much sushi 😉 .  Anyways, I decided to try and recreate a noodle bowl at home the other night and it turned out pretty great. Rice noodles are fast and easy to cook and you could add any protein you like, I chose smoked tofu. You can also choose any veggies you have on hand. The sauce is what brings the whole dish together…mmmmm peanut sauce! This recipes is perfect for a hot summer night when you don’t feel like cooking much over a hot stove or oven. 🙂

Vietnamese noodle ingredients

Vietnamese Noodle Bowl with tofu and veggies

Ingredients
  • half a package of Rice Noodles (flat or vermicelli)
  • 1 package of smoked tofu
  • ½ cucumber sliced and peeled
  • 1 carrot (sliced and peeled)
  • ½ lime (sliced)
  • ½ yellow pepper thinly sliced
  • ½ tsp grated ginger
  • ¼ cup peanut butter
  • 2 cloves of crushed garlic
  • 3 tsp sesame oil
  • 1 tbs soy sauce or Braggs
  • 2 tbs warm water
  • sesame seeds for garnish
  • sprig or basil
  • sprig of cilantro
Instructions
  1. First cook the rice noodles according to the package instructions. Once cooked drain and toss in 1 tsp sesame oil.
  2. While the noodles are cooking, prep the veggies.
  3. Mix together for the sauce: peanut butter, warm water, ginger, garlic,1 tsp sesame oil and soy sauce.
  4. Cut the tofu into small cubes and sauté for 5 min on medium heat with 1 tsp of sesame oil.
  5. Now build your noodle bowl by put the boodles in first, veggies on the side, tofu on top. Pour the sauce every over each bowl and garnish with cilantro, lime wedges,basil and sesame seeds.The lime tastes great squeezed over the noodles.
  6. Serve and enjoy!
